Mexican or Halloween Deviled Eggs

Here's another one to add to your collection. These would be
great as Halloween appetizers too--put a slice of green olives
stuffed with pimento in the center, they'll look like eyeballs. :)

MEXICAN DEVILED EGGS
(Serves 16)
--------------------
8 EGGS, hard-cooked, peeled
1/2 cup CHEDDAR CHEESE, shredded
1/4 cup MAYONNAISE
1/4 cup SALSA
2 TBS GREEN ONION, finely sliced
1 TBS SOUR CREAM
To taste SALT

Slice the eggs in half lengthwise; remove yolks and set whites
aside.

In a small bowl, mash yolks with cheese, mayonnaise, salsa,
onions, sour cream and salt. Evenly fill the egg whites.

Serve immediately or chill until ready to serve.
