Mexican Pepper Chicken

1.00 Medium Onion, chopped Cut into strips
1.00 Clove Garlic, crushed 1.00 Each Green & Red Pepper,
2.00 tb Vegetable Oil Cut into strips
1.00 tb Chili Powder 1.00 c Chili Sauce
1.00 tb Crushed Red Peppers 2.00 tb Red Wine Vinegar
1.00 lb Boneless & Skinless Chicken, 1.00 x Cooked Rice *

Cook and stir onion and garlic in hot oil until onion is softened. Add
chili powder and crushed red peppers and cook gently 5 min longer,
stirring occasionally. Add chicken and cook over medium heat for 5 min,
stirring frequently. Add peppers, chili sauce and wine vinegar, bring to
a boil and simmer for 15 min, stirring occasionally. Serve over cooked
rice.

Chili rice mix can be substituted for plain rice.
