Mexican Red Rice

1/2 onion, diced
2 tablespoon lard or vegetable oil
1/2 cup tomato sauce such as POMI or canned
1 3/4 cups chicken broth
1 cup raw rice
salt to taste

First melt the lard in a large saucepan. To this add the onions and saute
a bit. Then add the rice and saute until lightly brown. Then add the
tomato sauce and stir around a bit. Then add the chicken broth and
season to taste. Bring to a boil, stir well, cover and simmer very gently
for about 15 minutes. Check to make sure all liquid has evaporated,
if not, simmer a bit more until the rice is dry .Sometimes I add some
frozen peas or green beans in with the broth, this adds color and it tastes
really good...
