Mexican restaurant rice

Mexican Fried Rice

2 cups dry rice
1/2 cup oil or bacon drippings
1 onion, chopped
1 bell pepper, chopped
1-8 oz. can tomato sauce
salt and pepper
3 cups water

Put oil in bottom of large pot (I use a cast iron dutch oven) on medium
high heat. Add rice, onions, and bell pepper. Stir frequently, allowing
rice to brown, and vegetables to soften. Add tomato sauce, salt, pepper,
and water.
Stir. Bring to a boil, turn heat down to low, and cover. Cook about 20
to 30 minutes, until rice is done. Stir, turning over ingredients (tomato
sauce and veggies may rise to top). Serve.
