Well, a quick and cheap way would be to buy a bulk size can of
jalapenos en escabeche. This will have a few carrots, onions & herbs
along with a lot of chiles and escabeche liquid (pickle). Wash, peel and
cut up as many carrots as you want to add. Blanch for a while if you
want them tender, don't if you want them crunchier. In a big glass or
ceramic bowl, mix carrots in with the escabeche, and re-pack in snap-top
mason jars, and refrigerate. All you're doing is using "their" pickle to
preserve your added carrots. Being heat-jaded, I'd probably add a few
serrano or habanero chiles, too.
