Ingredients:
Clarified Butter(Ghee) - 1/8 cup
Raisins (Seedless) - 3 3/4    
Raw pieces of cashews - 0.06 cup
Water - 1/2 cup
Cardamom  - 1/8 teaspoon
Food Colour - 1/4 pinch
White Sugar - 1/4 cup
Semolina fine (sooji / upma ravva) - 0.19 cup


Method:
1. In a pot, heat sugar and water until sugar dissolves. Then, add food colour(Orange), stir and remove from heat. Keep aside.
2. In a heavy bottomed, non-stick pan, melt butter and fry cashew nuts and raisins until nuts turn light brown.
3. Now, add semolina and fry on low heat for a three to five minutes.
4. You will notice a slight change in the colour of semolina (Changes to a pale golden brown).
5. This might be hard to detect and easy to miss noticing until the semolina has burnt. A better way is to notice the change in the aroma of semolina. (From almost none to a very noticeable one).
6. Now, add sugar syrup from above and cardamom powder and on medium heat cook until the mixture turns thick.
7. Remove from heat and spread the contents on to a wide, well grease(with clarified butter)stainless steel plate. When cooled, cut into small diamond shapes.
8. Serve either mildly hot or warm.
