Ingredients
6 hard cooked eggs
1/4 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon pepper
Method
Shell eggs and with sharp knife, sliced them in half length wise.
Gently remove yolks and place them in bowl.
With fork, finely mash yolks.
Add remaining ingredients and mix till well blended.
With spoon pilke yolk mixture into egg white centers.
Cover eggs and refrigerate until you are ready to serve.
Variations:
Stir one of these into above egg yolk mixture:
Lei's :
Add 1/8 teaspoon ground red cayenne, 3 tablespoons crumpled crisp
fried bacon. 1 tablespoon finely minced gherkin and 1 tablespoons cream or
vanilla yogurt
Bacon :
Add 2 1.2 tablespoons crumbled, crisp fried bacon
Mexican: increase salt to 1/2 teaspoon, add 1/3 cup drained, chopped
tomatoes and 1 teaspoon chili powder
Shrimp :
Add 2 tablespoons chopped cooked shrimp and 2 tablespoons finely
minced celery.
Cucumber-Dill :
Add 1/4 cup minced cucumber, 1 teaspoon dillweed and 1
teaspoon cider vinegar
Pizza :
Using only 2 tablespoons mayonnaise, add 1 teaspoon oregano leaves,
1/8 teaspoon garlic powder and 2 tablespoons catsup.
Anchovy :
Add 1 oz minced anchovies
