Scoop out the insides of a tomato
Add these insides to perhaps a cup of cottage cheese, a tsp-to-Tbsp mayo, generous dash of paprika, salt if you're into it,possibly fresh chives for variety.
Mix up and "stuff" back into the tomato. Instant, and elegant too!
If you really get carried away, you can cut the tomato partway down into sections, flower-style, but it has little effect on the flavor.
